Tomatoes belong to the favored fruit vegetables because it tastes good, fresh and slightly acidic. Tomatoes contain a lot of nutrients which is beneficial to health, such as vitamin A, vitamin C and B vitamins, protein, fat, carbohydrates, and certain minerals.

The fruit is damage to other resulting in decreased physical quality, it also causes a decrease in nutritional value. Given this, it should be done in a revenue loss efforts emphasize both quantity and quality through improved post-harvest handling technologies.

To avoid huge losses to farmers and traders tomatoes, should be improved post-harvest technology. Post-harvest handling of tomatoes starting determine the time of harvest, harvesting, sorting, washing, grading, packing, transport, storage and processing.

Tomato storage technology that uses evaporation system. This can be done by all growers of tomatoes, because it is simple and requires a relatively low cost compared to other methods.
The main function of storing fresh tomatoes is to maintain the quality and extend the freshness by controlling the rate of transpiration and respiration, by setting the temperature, humidity and atmosphere in the room. While the benefits are able to maintain continuity of supply and stability of price. The equipments used in the evaporation system is a room or cabin air and a container filled with water or a water source.
